Taiwanese flat cabbage is sweet and versatile, with an unusual “deflated” shape.
Sauteed, stir-fried, pickled; thrown into soups, mixed with tofu, or stuffed into gua bao (a taco-shaped steamed bun)…
… that’s the cabbage I grew up eating!
Just as I hope to have described this big flat cabbage in a mouthwatering way, I hope to convey in my work the gamut of emotions from personal experience: humor in the midst of suffering, curiosity in spite of horror, hope in the face of fear. I am Taiwanese-American, and am a (often) feminine transgender man.
